Scope
This experiment reimagines the iconic chili–garlic sauce through two build paths: a fermented version for tang and funk, and a quick-cooked version for freshness and speed. It explores how fermentation, heat, and sugar interact to create depth, stability, and balance between acid, sweetness, and spice.
Objective
Engineer a chili–garlic sauce that achieves vibrant color, controlled heat, and complex flavor through either lactic fermentation or direct reduction, maintaining a stable pH and glossy viscosity.

Base Build (Fermented Sriracha)
Red chilies (Fresno, jalapeño, Thai mix): 450 g, 1 lb, 60%
Garlic: 30 g, 6 cloves, 4%
Brown sugar: 30 g, 2 Tbsp, 4%
Salt: 18 g, 3 tsp, 2%
Water: 240 g, 1 cup, 30%
Rice vinegar (added post-ferment): 60 g, ¼ cup, —
Procedure – Fermented Version
Roughly chop chilies, keeping seeds for heat.
Blend with garlic, sugar, salt, and water to a coarse purée.
Transfer to a glass jar and cover loosely; ferment at room temperature 5–7 days, stirring daily.
Once bubbles appear and aroma is tangy, blend until smooth.
Simmer with rice vinegar for 10 minutes to stabilize, then cool and store refrigerated.
Quick-Cook Variant
Blend same base ingredients.
Simmer mixture with rice vinegar for 20–30 minutes until reduced and glossy.
Blend smooth again and strain if a silky texture is preferred.
Variants
Sweeter Sriracha: Add 2 Tbsp honey or maple syrup for a balanced sweet–heat.
Fruit Sriracha: Add ½ cup mango or pineapple for tropical acidity.
Extra Garlic: Double garlic for a pungent profile.
Smoky Sriracha: Add 1 tsp smoked paprika or charred chilies for BBQ-style depth.
Vegan Umami: Stir in 1 Tbsp soy sauce or miso for savory complexity.
Lab Notes & Observations
Fermentation lowers pH through lactic acid production, creating tang and natural preservation.
Quick-cook versions rely on vinegar for immediate acidification but less complexity.
Capsaicin concentration (in seeds and membranes) determines heat intensity.
Sugar not only balances heat but feeds fermentation and aids caramelization during cooking.
Final pH should remain below 4.2 for safe storage.
